1 LB of your choice of Scaffidi’s Pasta.
2 TBSP Minced Garlic
2 TBSP Olive Oil
1 TSP Salt
1 TSP Black Pepper
2 TSP Italian Seasoning
4 OZ Chopped Bacon
2 Large Eggs – Whisked
GARNISH with Fresh Parsley
GARNISH with Fresh Parmesan Cheese
1. With a medium sized pan, sauté oil and garlic. Add Bacon to pan, and sauté until crisp. Let simmer.
2. In a large pot, add water and salt. Cook pasta according to package instructions. Reserve ½ cup of pasta water and strain pasta well.
3. Add reserved pasta water into the pan, and sauté. Add cooked pasta into the pan, along with egg mixture, salt, black pepper, and Italian Seasoning. Turn down heat, and let simmer.
4. Plate and garnish with Parmesan Cheese and Parsley.
